Morrisons will be the first to stock Yorkshire Maris Bard new potatoes this year in all Yorkshire stores. This popular summer potato comes into season from June until July, replacing the delicious Jersey Royal potato.

Sourced from local suppliers in Selby, Fulford and Market Weighton, the Yorkshire new potatoes are grown in the light sandy soils of the vale of York and the foot of the Yorkshire Wolds. These warm up surprisingly quickly, with early carrots and early crisping potatoes also grown in the area.

A great source of fibre and vitamin C, the Maris Bard tastes best when cooked simply to bring out the true flavours. Try this simple salad recipe, a perfect accompaniment for BBQ food this summer.

 

Creamy New Potato Salad

Prep Time: 5 mins
Cook Time: 15 mins
Serves: 4

Ingredients

500g new potatoes, scrubbed and halved
1 tbsp half fat crème fraeche
1 tbsp low fat mayonnaise
1 red onion, finely chopped
1 tsp lemon juice
2 tbsp freshly chopped chives
Salt and pepper, to taste

Method:

1) Place the new potatoes in a pan of lightly salted boiling water. Cover and simmer for 15 minutes or until tender then drain and allow to cool
2) In a bowl mix together the remaining ingredients and carefully stir in the potatoes
3) Season to taste
